  • 1 cup skim milk
  • 2 tsp lemon juice
  • 1/2 cup plain nonfat Greek yogurt
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup chopped pecans
  • 2 cup powdered sugar
  • 1 tbsp softened butter

Prepare

  • Thaw 1/2 cup frozen wild blueberries
  • Juice 2 lemons

  1. Step 1.

    Preheat the oven to 400°F. Grease the bottoms of 12 medium muffin cups with butter or nonstick spray.

    In a large bowl, beat the egg with the milk and lemon juice until combined. Add the Greek yogurt and beat until the mixture is smooth and well mixed.

    Add the all-purpose flour, whole wheat flour, sugar, baking powder, and salt to the wet ingredients. Stir just until the dry ingredients are moistened; the batter should be lumpy. Gently fold in the chopped pecans and the thawed or fresh wild blueberries.

    While the muffins cool, make the icing: In a small bowl, gradually add the powdered sugar to the softened butter, mixing until combined. Add the lemon juice a little at a time, stirring until the icing is smooth and creamy. Once the muffins are completely cool, frost each muffin with the lemon icing.
