White Chocolate SOUP With Caramelised FIGS
A velvety white chocolate soup served chilled, topped with caramelized figs for a sweet and elegant dessert.

Step 1.
In a medium saucepan, bring the cream and milk to a boil over medium-high heat, then remove from heat. Add the chopped white chocolate and let it sit for 1 minute, then stir until completely melted and smooth.

Stir in the yogurt, lime juice, and lime zest until well combined. Cover and refrigerate for at least 2 hours, or until thoroughly chilled.

Just before serving, cut the fresh figs in half. Sprinkle the cut sides evenly with brown sugar. Using a kitchen blowtorch, caramelize the sugar until bubbly and golden, or place under a hot grill (broiler) for 1–2 minutes until caramelized.

Divide the chilled white chocolate soup among 4 bowls. Top each bowl with 2 caramelized fig halves and serve immediately.
