Watermelon Sorbet

Step 1.
Set a saucepan over medium-high heat. Add 200g (scant 1 cup) caster or granulated sugar and 700ml (24fl oz, 3 cups) water. Bring to a boil, stirring frequently, until the sugar has fully dissolved. Remove from heat and let the syrup cool completely to room temperature.

In a food processor, combine the 600g (1lb 5oz) diced fresh watermelon, the cooled sugar syrup, and the juice of 1 lime. Blend until smooth. Transfer the mixture to a container and refrigerate for 2 hours until well chilled.

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the churned sorbet to an airtight container and freeze for at least 2 hours to firm up. Store in the freezer for up to 1 month.
