Gather these ingredients - no prep needed yet.

  • 2 tbsp salted butter
  • 1 can evaporated milk
  • 8 oz cream cheese
  • 1/2 cup whole milk
  • 8 oz shredded sharp cheddar cheese
  • 8 oz shredded pepper jack cheese
  • 1/2 lb chopped cooked shrimp meat
  • 1 tsp red pepper flakes
  • 1 tsp Creole seasoning
  • 1/2 tsp onion powder
  • crusty bread
  • tortilla chips

Prepare

  • Chop 1/4 cup red bell pepper
  • Chop 1/4 cup green onions
  • Mince 1 jalapeño
  • Mince 3 garlic cloves

Let's Cook

  1. Step 1.

    Melt 2 tablespoons salted butter in a medium skillet over medium heat. Add ¼ cup chopped red bell pepper, ¼ cup chopped green onions, 1 minced medium jalapeño, and 3 minced garlic cloves. Cook, stirring, for 2 minutes until the vegetables soften.

  2. Step 2.

    Add the 12-ounce can of evaporated milk and 8 ounces cream cheese to the skillet. Stir until the cream cheese is fully melted and incorporated. Reduce the heat to low, then pour in ¼ cup of the whole milk. Whisk until well combined.

  3. Step 3.

    Add 8 ounces shredded sharp cheddar cheese and 8 ounces shredded pepper jack cheese to the skillet. Whisk continuously until the cheeses are fully melted and the mixture is smooth. Stir in the remaining ¼ cup whole milk to thin the dip to your desired consistency.

  4. Step 4.

    Fold in ½ pound chopped cooked shrimp meat, 1 teaspoon red pepper flakes, 1 teaspoon Creole seasoning, and ½ teaspoon onion powder until evenly distributed. Transfer the dip to a serving dish and serve immediately with crusty bread and tortilla chips.
