While the sauce cooks, preheat the oven to 400°F. Have ready a 13 × 9-inch baking dish. If necessary, scale and prepare for cooking: One whole 2- to 2½-pound red snapper or 1½ to 2 pounds red snapper fillets, cut into 4 equal pieces

Spread a thin layer of the sauce in the bottom of the dish and place the fish on top. Cover the fish with the remaining sauce and bake for 15 to 20 minutes, depending on the thickness of the fish or fillets. The flesh should be opaque and flake apart when prodded with a fork.
