Prepare

  • 4 scallions, thinly sliced
  • 1 1-inch piece ginger, peeled and cut into matchsticks
  • 2 clove garlic, thinly sliced
  • 1 jalapeño, seeded if desired, thinly sliced
  • 1 cup edamame, thawed if frozen

Let's Cook

  1. Step 1.

    In a small bowl, whisk together 5 tablespoons fresh lime juice, 2 tablespoons reduced-sodium soy sauce, 2 teaspoons fish sauce, and 1 teaspoon sugar until the sugar dissolves. Set aside.

    Heat 2 tablespoons canola oil in a large skillet over medium-high heat. Add 8 ounces sliced shiitake mushrooms and cook, tossing occasionally, until just golden brown, 2 to 3 minutes. Transfer the mushrooms to a plate.

    Return the skillet to medium-high heat and add the remaining 2 tablespoons canola oil. Add 4 thinly sliced scallions, 1 piece ginger cut into matchsticks, 2 thinly sliced garlic cloves, and 1 thinly sliced jalapeño. Cook, stirring constantly, for 1 minute until fragrant.

  4. Step 4.

    Add 4 cups cooked basmati rice and 1 cup edamame (thawed if frozen) to the skillet. Cook, tossing to combine, for 1 minute until the rice is heated through.

  5. Step 5.

    Pour the reserved soy sauce mixture into the skillet and add the cooked mushrooms. Toss everything together until well combined and heated through, about 1 minute.

    Serve the fried rice topped with a fried egg per serving. Garnish with fresh cilantro leaves and lime wedges if desired.
