Gather these ingredients — no prep needed yet.

  • 1/2 lbs ground beef chuck
  • Kosher salt and pepper
  • 3 tbsp mayonnaise
  • 4 rye bread
  • 3 Swiss cheese
  • 1/2 cup caramelized onions
  • 3 American cheese

Let's Cook

  1. Step 1.

    Divide the ground beef into two equal portions and shape each into a thin patty, making them slightly larger than the slices of rye bread. Heat a large cast-iron skillet over medium-high heat. Season the patties with ¼ teaspoon each of kosher salt and black pepper. Cook the patties for 2 minutes per side, then transfer them to a plate and set aside.

  2. Step 2.

    Wipe out the skillet with a paper towel and return it to medium-low heat. Spread 3 tablespoons of mayonnaise evenly on one side of each of the 4 slices of rye bread. Place 2 slices of bread, mayonnaise side down, in the skillet. Top each with 1½ slices of Swiss cheese, one cooked beef patty, ¼ cup of caramelized onions, and 1½ slices of American cheese. Place the remaining 2 slices of bread on top, mayonnaise side up.

  3. Step 3.

    Wrap the bottom of a small skillet in aluminum foil and place it on top of the sandwiches to press them down. Cook until the bread is golden brown and crisp, about 3 minutes per side. Serve immediately.
