Prepare

  • 1 small onion, finely chopped
  • 1/2 lbs Italian sausage, casings removed
  • 0.5 large bunch kale, stems discarded and leaves chopped
  • Slice 3/8 lbs fresh mozzarella
  • Fresh basil leaves, for topping

Let's Cook

  1. Step 1.

    Preheat the oven to 350°F.

  2. Step 2.

    In a large bowl, whisk together 12 large eggs, ½ cup whole milk, ½ cup grated pecorino cheese, ½ teaspoon pepper, and ¼ teaspoon salt until well combined.

    Heat 2 tablespoons extra virgin olive oil in a large oven-safe skillet (preferably cast-iron) over medium heat. Add the finely chopped onion, cover, and cook, stirring occasionally, until tender, about 5 minutes.

    Add the Italian sausage (casings removed) to the skillet and cook, breaking it up with a spoon, until browned, about 5 minutes.

    Add the chopped kale (stems discarded) and cook, stirring occasionally, until just wilted, about 1 minute.

    Reduce the heat to low and pour the egg mixture into the skillet, stirring gently to distribute the sausage and vegetables evenly. Transfer the skillet to the oven and bake until the frittata is almost set, 18 to 20 minutes.

    Remove the skillet from the oven and turn on the broiler. Gently spread 1 cup Easy Tomato Sauce or jarred marinara over the frittata, then top with sliced fresh mozzarella. Broil until the cheese is browned and bubbling, about 5 minutes.

    Top with fresh basil leaves and serve immediately.
