Turnip And Mustard Greens With Salt Pork
A Southern-style side dish of turnip and mustard greens simmered with salt pork, onion, and seasonings until tender. The salt pork infuses the greens with pure pork flavor, and chopped turnips are added near the end for extra texture.

- 1 tsp coarse black pepper
- 1 tsp red pepper flakes
- 1 tbsp brown sugar

- Slice 12 oz salt pork
- Dice 1 medium yellow onion
- 3 bunch mustard greens, cleaned and cut
- 6 bunch turnip greens, cleaned and cut
- 2 medium turnips, peeled and chopped

In a large pot over medium heat, add the 12 ounces sliced salt pork. Cook for 5 to 7 minutes, stirring occasionally, until the pork browns and renders some fat.

Add the diced yellow onion to the pot and cook for 2 more minutes, stirring, until the onion softens slightly.

Pour in 10 to 12 cups vegetable broth (use the larger amount if you prefer more pot liquor). Slowly add the cleaned and cut mustard greens and turnip greens, stirring after each addition to wilt them down before adding more.

Once all greens are in the pot, sprinkle in 2 teaspoons seasoning salt, 1 teaspoon coarse black pepper, and 1 teaspoon red pepper flakes. Stir well to combine, then add 1 tablespoon brown sugar and stir again.

Reduce the heat to medium-low, cover the pot with a lid, and let the greens simmer for about 1½ hours, stirring occasionally.

After 1½ hours, add the peeled and chopped turnips to the pot. Stir, re-cover, and continue simmering for 30 more minutes, until the turnips are tender. Serve with cornbread.
