Let's Cook

  1. Step 1.

    Reheat the chicken and turkey separately so both retain their texture. You can do this in the microwave, on the stovetop, or in the oven, but keep them separate to avoid mixing flavors. Heat until warmed through, about 2-3 minutes in the microwave or 5-7 minutes in a skillet over medium heat.

  2. Step 2.

    While the proteins reheat, heat the cooked rice, roasted vegetables, and broccoli. You can steam the broccoli or sauté it until tender-crisp, about 3-4 minutes. Warm the rice and roasted vegetables in the microwave or on the stovetop until hot.

  3. Step 3.

    Once everything is heated, add the rice to a large bowl as the base. Arrange the chicken on one side and the turkey on the other, keeping them separate. Fill the remaining sections with the roasted vegetables and broccoli. Add the avocado slices or chunks on top or on the side.

  4. Step 4.

    Drizzle one protein (e.g., chicken) with lemon-herb yogurt and the other (e.g., turkey) with smoky red-pepper yogurt. Finish with a squeeze of lime or lemon juice and a sprinkle of fresh parsley or coriander. Serve immediately.
