Step 1.
Open the can of tuna and drain the liquid. In a medium bowl, combine the drained tuna, 2 to 3 tablespoons of mayonnaise (or to taste), 1 chopped celery stalk, salt and pepper to taste, and ½ teaspoon mustard. Stir until all ingredients are evenly mixed and the tuna is broken into flakes.

Taste the tuna salad and adjust seasoning with more salt, pepper, or mustard if desired. For a creamier texture, add a little more mayonnaise.

Spread the tuna salad generously onto slices of white bread. Top with another slice of bread to form sandwiches. If serving as part of a buffet, cut each sandwich in half diagonally or into quarters for a dainty teatime snack. Serve immediately or refrigerate until ready to serve.
