Let's Cook

    Dredge the tuna steaks in flour, coating both sides evenly. Shake off any excess flour.

    Heat sesame oil in a large iron skillet over medium-high heat. Add the floured tuna steaks, diced peppers, and diced onion. Sauté for 2-3 minutes per side, until the fish is lightly browned and the vegetables begin to soften.

    Add the fresh garlic, fresh ginger, diced mango, red pepper flakes, black pepper, soy sauce, corn syrup, honey, cream sherry, ground dried orange peel, and a dash of wasabi powder to the skillet. Stir gently to combine.

    Reduce heat to medium-low and let the mixture simmer for about 10 minutes, stirring occasionally, until the fish is tender and cooked through (flakes easily with a fork) and the sauce has thickened slightly.
