THE Ultimate Fried EGG Sandwich
A quick and indulgent fried egg sandwich with Taleggio cheese, peppery arugula, and ripe tomato slices on toasted sourdough. The extra yolk adds richness.

- 1 yolk
- 1 tbsp unsalted butter
- 2 sourdough bread
- 1 tbsp olive oil
- kosher salt
- freshly ground black pepper
- 1 arugula
- 2 ripe tomato

- 2 oz Taleggio cheese, thinly sliced

Step 1.
Crack 1 egg into a small bowl and carefully add the extra yolk, keeping the yolk intact. Set aside.

Heat a wok over medium heat. Lightly butter one side of each of the 2 slices of sourdough bread.

Place the Taleggio cheese slices on the unbuttered side of one bread slice. Put both bread slices in the wok, buttered side down, and toast until golden brown, about 2–3 minutes. Remove from the wok and set aside.

Still over medium heat, add 1 tablespoon olive oil to the wok. Gently add the egg and extra yolk. For a firm white but runny yolk, cover the wok and cook until the white is opaque and set, about 3 minutes. Season lightly with salt and pepper.

Place the fried egg on the bread slice with melted cheese. Top with arugula, tomato slices, and the other bread slice (buttered side up). Serve immediately.
