THE Smoking Dragon Fruit
A smoky and sweet cocktail combining Scotch whisky with dragon fruit juice, honey syrup, and lemon juice. Garnished with a lemon wheel.
Ingredients
- 2 oz Scotch whisky
- 1 1/2 oz fresh dragon fruit juice or prickly pear juice
- 3/4 oz honey syrup
- 1 oz freshly squeezed lemon juice
- 1 cup ice
- Lemon wheel
- 2 strawberries stemmed and halved
- 1/2 tsp coconut sugar or brown Swerve
- 1 fresh ginger root
- 4 fresh mint
- 1 1/2 oz white light rum
- 1 oz freshly squeezed lime juice
- Crushed ice
- Club soda
- Fresh mint sprigs

- 1 fresh ginger root

- 1 1/2 oz white light rum
- 1 oz freshly squeezed lime juice
- Crushed ice
- Club soda
- Fresh mint sprigs
Prepare
- 2 strawberries, stemmed and halved

Step 1.
In a cocktail shaker, combine 2 ounces Scotch whisky, 1½ ounces fresh dragon fruit juice (or prickly pear juice), ¾ ounce honey syrup (equal parts purified water and honey), 1 ounce freshly squeezed lemon juice, and 1 cup ice.

Step 2.
Shake vigorously for 20 seconds until well-chilled.

Fine-strain the drink into a coupe glass.

Garnish with a floating lemon wheel.

In a tall Collins glass or tumbler, add 2 stemmed and halved strawberries, ½ teaspoon coconut sugar or brown Swerve, 1 (⅛-inch) slice fresh ginger root, 4 fresh mint leaves, and 1½ ounces white light rum.

Muddle well for 20 to 30 seconds until the strawberries are broken down and the mint is fragrant.

Add 1 ounce freshly squeezed lime juice and fill the glass with crushed ice.

Top with club soda and garnish with fresh mint sprigs.
