Let's Cook

Step 1.
Heat 4 tbsp vegetable oil in a large non-stick frying pan over medium-high heat. When hot, add 1½ tsp panch phoron and the sliced green chilli; fry for 30 seconds until fragrant. Then add the can of chopped tomatoes and fry for 5 minutes, stirring occasionally, until the oil starts to separate from the tomatoes.

Step 2.
Add the raw king prawns, ¼ tsp ground turmeric, ⅛ tsp chilli powder, 1 tsp muscovado sugar, and 2 tsp English mustard paste. Fry for 3 minutes, stirring constantly, until the prawns start to turn pink.
-
Step 3.
Add the frozen peas, 250ml water, and 1 tsp salt. Stir until everything is well combined. Cover the pan, reduce heat to low, and simmer for 6–8 minutes until the prawns are cooked through and the sauce has thickened slightly.
