Sweet Potatoes With Marshmallows
Sweet potatoes are mashed with brown sugar, butter, and cinnamon, then topped with marshmallows and baked until golden. A classic holiday side dish.

Step 1.
Peel 5 or 6 sweet potatoes or yams, then cut them into cubes. Place the cubes in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium-high and cook until the sweet potatoes are tender when pierced with a fork, about 15–20 minutes. Drain well.

While the sweet potatoes are still hot, transfer them to a large mixing bowl. Add ½ cup brown sugar, 3 to 4 tablespoons butter, 1 teaspoon salt, the juice of ½ orange, and ½ teaspoon cinnamon. Mash with a potato masher or fork until smooth and well combined.

Preheat your oven to 350°F. Grease a casserole dish (about 2-quart size) with butter or nonstick spray. Scoop the sweet potato mixture into the prepared dish and spread it into an even layer.

Sprinkle 2 cups mini marshmallows evenly over the top of the sweet potato mixture. Bake in the preheated oven until the marshmallows are puffed and lightly toasted, about 10–15 minutes. Serve hot.
