A refreshing summer fruit salad of peaches and berries, lightly sweetened with sugar and brightened with lemon juice. Serve chilled, with optional whipped cream and fresh herbs.

Ingredients

  • 4 peaches (about 1½ pounds)
  • 2 cups blueberries, blackberries, or a combination
  • ¼ cup sugar, or to taste
  • 1 to 2 tablespoons lemon juice, or to taste
  • (2 tablespoons chopped mint, tarragon, or basil)

    • 1 cup cold heavy cream
    • (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste)
    • (½ teaspoon vanilla)
    Sub-recipe steps
    1. Beat in a large bowl (chill the bowl if your kitchen is very warm) with a hand mixer or balloon whisk or in a stand mixer set at medium-high speed, until stiff and billowy but not grainy: 1 cup cold heavy cream; (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste); (½ teaspoon vanilla)
    2. Use immediately.

    Peel, pit, and slice: 4 peaches (about 1½ pounds)

  2. Step 2.

    Place in a bowl and add: 2 cups blueberries, blackberries, or a combination; ¼ cup sugar, or to taste; 1 to 2 tablespoons lemon juice, or to taste

  3. Step 3.

    Stir gently and let sit, refrigerated, for at least 30 minutes. If desired, just before serving, stir in: (2 tablespoons chopped mint, tarragon, or basil)

  4. Step 4.

    Serve with: Whipped Cream
