Steamed lobster is a simple and elegant dish. The lobsters are steamed with a little water and wine until bright red, then served with melted butter and lemon wedges.

Gather these ingredients - no prep needed yet.
- 1½ inches water
- (1 cup or more white wine)
- Live lobsters
- (Individual bowls of the cooking liquid)
- Melted butter
- Lemon wedges

Step 1.
In a deep stockpot, bring to a boil over high heat: 1½ inches water; (1 cup or more white wine)

Add: Live lobsters

Step 3.
Cover, weighting the lid to keep in the steam and the lobsters. Steam about 10 minutes for 1 ½-pound lobsters, plus about 3 minutes for each additional pound, until they turn bright red. Remove with tongs. For larger lobsters to be used for salads, hors d’oeuvre, or sauced dishes, plunge them into ice water to arrest further cooking.
