    • 12 cups tightly packed trimmed spinach, chard, baby kale, young mustard greens, or a combination (about 1 pound)
    • ¼ teaspoon salt
    • Dash of lemon juice, vinegar, or hot sauce
    • Black pepper to taste
    • Crumbled crisp bacon
    Sub-recipe steps
    1. Wash thoroughly but do not dry: 12 cups tightly packed trimmed spinach, chard, baby kale, young mustard greens, or a combination (about 1 pound)
    2. Coarsely chop, then place in a large skillet. Season with: ¼ teaspoon salt
    3. Cook, stirring frequently, over medium heat until completely wilted but still bright green, about 5 minutes. Transfer to a serving dish and toss with: Extra-virgin olive oil, melted butter, or Brown Butter; Dash of lemon juice, vinegar, or hot sauce; Black pepper to taste
    4. Or top with any of the following: Garlic and Walnut Sauce or Hollandaise; Sliced Hard-Boiled Egg; Crumbled crisp bacon; Browned Bread Crumbs
  • 3 green onions, coarsely chopped
  • 1 to 2 garlic cloves, coarsely chopped
  • 2 cups plain Greek yogurt or sour cream
  • ¼ cup grated Parmesan
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper
  • Salt to taste
  • (One 4-ounce can water chestnuts, drained and chopped)

  • 1 One 10-ounce package frozen chopped spinach, thawed, or 1 pound fresh spinach, cooked and chopped
  • 3 green onions, coarsely chopped
  • 1 to 2 garlic cloves, coarsely chopped
  • 2 cups plain Greek yogurt or sour cream
  • ¼ cup grated Parmesan
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper
  • Salt to taste
  • (One 4-ounce can water chestnuts, drained and chopped)

Let's Cook

  1. Step 1.

    Squeeze the moisture from: One 10-ounce package frozen chopped spinach, thawed, or 1 pound fresh spinach, cooked and chopped

  2. Step 2.

    Mince in a food processor: 3 green onions, coarsely chopped; 1 to 2 garlic cloves, coarsely chopped

  3. Step 3.

    Add the spinach along with: 2 cups plain Greek yogurt or sour cream; ¼ cup grated Parmesan; ¼ teaspoon black pepper; ⅛ teaspoon cayenne pepper; Salt to taste

  4. Step 4.

    Pulse until smooth. If desired, stir in: (One 4-ounce can water chestnuts, drained and chopped)

  5. Step 5.

    Refrigerate for 1 hour before serving.
