Prepare
- 0.25 purple cabbage, cored and very thinly sliced
- 1 small red bell pepper, quartered and thinly sliced
- 1 small jalapeño, thinly sliced
- 1/4 cup fresh cilantro, roughly chopped

Step 1.
In a large bowl, whisk together 2 tablespoons lime juice, 1 tablespoon mayonnaise (regular or vegan), and ½ teaspoon kosher salt until well combined. Taste and add more mayonnaise if desired for a creamier dressing.

Add ¼ small head purple cabbage (cored and very thinly sliced) to the bowl and toss well to coat evenly with the dressing.

Add 1 small red bell pepper (quartered and thinly sliced) and 1 small jalapeño (thinly sliced) to the bowl and toss to combine.
