  • 2 tsp seasoning salt
  • 1 1/2 tsp coarse black pepper

Prepare

  • Chop 1 lb bacon
  • Dice 1 large yellow, white, or red onion
  • Dice 1 large red bell pepper
  • 1 green cabbage, cored and sliced
  • 2 lbs collard greens, ribs removed, leaves chopped
  • Mince 1 tbsp garlic

Let's Cook

  1. Step 1.

    Wash the cabbage and collard greens thoroughly. Core the cabbage and slice it; remove the ribs from the collard greens and chop the leaves.

    Place a large pot over medium-high heat. Add the chopped bacon and cook, stirring occasionally, until the bacon browns slightly, 4 to 5 minutes.

    Add the diced onion and diced red bell pepper to the pot. Continue cooking, stirring occasionally, until they start to soften, about 2 minutes.

    Fold in the sliced cabbage and chopped collard greens. Add 1½ cups water, 1 tablespoon minced garlic, 2 teaspoons seasoning salt, 1½ teaspoons coarse black pepper, and a pinch of red pepper flakes (if using). Stir everything together well.

    Reduce the heat to medium, cover the pot, and cook, stirring occasionally, until the cabbage and collards are tender, about 45 minutes.
