Soulful Cabbage And Collard Greens
A soulful side dish of cabbage and collard greens cooked with bacon, onion, and bell pepper. Serve with fried chicken or catfish, potato salad, and cornbread.

- 1 1/2 tsp coarse black pepper

- Chop 1 lb bacon
- Dice 1 large yellow, white, or red onion
- Dice 1 large red bell pepper
- 1 green cabbage, cored and sliced
- 2 lbs collard greens, ribs removed, leaves chopped
- Mince 1 tbsp garlic

Step 1.
Wash the cabbage and collard greens thoroughly. Core the cabbage and slice it; remove the ribs from the collard greens and chop the leaves.

Place a large pot over medium-high heat. Add the chopped bacon and cook, stirring occasionally, until the bacon browns slightly, 4 to 5 minutes.

Add the diced onion and diced red bell pepper to the pot. Continue cooking, stirring occasionally, until they start to soften, about 2 minutes.

Fold in the sliced cabbage and chopped collard greens. Add 1½ cups water, 1 tablespoon minced garlic, 2 teaspoons seasoning salt, 1½ teaspoons coarse black pepper, and a pinch of red pepper flakes (if using). Stir everything together well.
