- 4 potatoes
- 1 tsp salt
- 1 1/2 tbsp parmesan cheese
Prepare
- Melt 3 tbsp butter
- Chop 2 tbsp fresh herbs
- Grate 4 tbsp cheddar cheese

Step 1.
Preheat the oven to 425°F. Scrub and rinse the potatoes; if the skin is tough, peel them. Using a spoon handle placed alongside each potato to prevent cutting all the way through, slice each potato crosswise into thin slices about 1/8-inch thick, leaving the bottom intact so the slices stay connected.

Step 2.
Place the sliced potatoes in a baking dish, fanning the slices slightly apart. Sprinkle evenly with 1 teaspoon salt, then drizzle with 3 to 3 tablespoons melted butter. Sprinkle with 2 to 3 tablespoons chopped fresh herbs (or 2 to 3 teaspoons dried herbs).

Bake the potatoes at 425°F for about 50 minutes, until the potatoes are tender when pierced with a fork and the edges are starting to brown.

Remove the baking dish from the oven. Sprinkle 4 tablespoons grated cheddar cheese and 1½ tablespoons grated Parmesan cheese evenly over the potatoes. Return to the oven and bake for another 10 to 15 minutes, until the cheeses are melted and lightly browned and the potatoes are soft inside. Check doneness with a fork.
