  • 2 tsp vanilla extract
  • 1/2 cup key lime juice
  • 1 graham cracker crust pie shell

  • Soften 1 cream cheese

  1. Step 1.

    In a large bowl, using an electric mixer, beat the softened 8-ounce cream cheese on medium speed until creamy and smooth, about 1 minute.

    Gradually add the 14-ounce can of sweetened condensed milk, beating on low speed until fully incorporated and smooth. Mix in 2 teaspoons vanilla extract. Then add ½ cup key lime juice and blend thoroughly on low speed until the filling is well combined and slightly thickened.

  3. Step 3.

    Pour the filling into the 8-inch graham cracker crust pie shell, spreading evenly. Cover the pie with plastic wrap or foil and refrigerate for at least 6 hours, or overnight, until firm and chilled.
