Shrimp Sliders
These shrimp sliders are a twist on classic crab cakes, using ground and chopped shrimp for texture. Pan-fried until golden, they're served on slider buns with customizable toppings like avocado, tomato, and onion.

- 1/2 cup all-purpose flour
- 1/2 cup vegetable oil

- 1 1/2 lbs jumbo raw shrimp, peeled and deveined, divided
- Chop 1/4 cup green onion
- Mince 1 tsp garlic
- 2 eggs, lightly beaten

Step 1.
Place about three-quarters of the shrimp (about 1.1 pounds) into a food processor or blender. Pulse until the shrimp is well ground but not pasty. Transfer the ground shrimp to a large mixing bowl.

Chop the remaining shrimp (about 0.4 pounds) into small pieces, about 1/4-inch dice. Add the chopped shrimp to the bowl with the ground shrimp.

Add 1/4 cup chopped green onion, 1 teaspoon minced garlic, 1.5 teaspoons Creole seasoning, and 1/2 teaspoon ground black pepper to the bowl. Mix well with a spoon or your hands until evenly distributed.

Pour in 2 lightly beaten eggs and mix until incorporated. Sprinkle 1/2 cup all-purpose flour over the mixture and mix until the flour is fully incorporated and the mixture holds together.

Form the mixture into 12 patties, each about 2 inches in diameter and 1/2 inch thick. Place them on a plate or tray and set aside.

Heat 1/2 cup vegetable oil in a large skillet over medium heat until shimmering. Working in batches of 3 to 4 patties, carefully place them in the hot oil. Cook for 5 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

Place each cooked shrimp patty on a slider bun. Serve with toppings such as sliced onions, avocados, tomatoes, and mayonnaise, allowing guests to build their own sandwiches.
