Shrimp Scampi
Quick and easy shrimp scampi broiled with garlic, oregano, and bread crumbs. Serve over rice for a simple weeknight dinner.

- crushed red pepper flakes

- 2 tbsp fine fresh bread crumbs

- Chop 2 tsp chopped fresh garlic
- Crush 1/2 tsp dried crushed oregano
- freshly ground black pepper, ground

Step 1.
Set the broiler to high and position an oven rack 3 to 4 inches from the heating element.

Peel and devein the shrimp, leaving the tails on if desired. Rinse the shrimp under cold water and pat dry with paper towels.

In a large bowl, combine the chopped garlic, crushed red pepper flakes, dried oregano, bread crumbs, olive oil, salt, and black pepper. Add the shrimp and toss until evenly coated.

Line a baking dish or rimmed cookie sheet with aluminum foil. Arrange the shrimp in a single layer on the foil.

Place the baking dish under the broiler and cook for 5 to 6 minutes without turning the shrimp. The shrimp should be pink and opaque when done.

Remove the shrimp from the broiler, baste with any pan juices, and serve immediately over hot rice.
