  • 120 g gram/chickpea flour
  • 1/4 tsp ground turmeric
  • 1 tsp chilli powder
  • 1/4 tsp salt
  • vegetable oil

Let's Cook

  1. Step 1.

    Lightly grease the bottom of a medium mixing bowl with a little vegetable oil. Add 120g gram flour, ¼ tsp ground turmeric, 1 tsp chilli powder, and ¼ tsp salt. Mix until fully combined.

  2. Step 2.

    Add 1 tablespoon of vegetable oil to the flour mixture and mix until it forms a soft dough. Add water 1 tablespoon at a time, mixing after each addition, until a dense, tight dough forms. Knead the dough for 3–5 minutes until it firms up. If the dough sticks to your hands, lightly grease your palms with a little oil. Divide the dough into two equal portions and set aside.

  3. Step 3.

    Lightly oil the inside of your sev noodle maker and insert one ball of dough. Pour vegetable oil into a large non-stick frying pan to a depth of about 2.5 cm (1 inch) and set over medium heat. To test if the oil is ready, drop a small piece of dough into the oil; it should sizzle and float to the top without changing color.

  4. Step 4.

    When the oil is ready, hold the noodle maker over the frying pan. Turn the handle to extrude noodles into the pan, slowly moving the sev maker in a circular motion to create a ring of noodles. Stop when you have completed one full circle.

  5. Step 5.

    Fry the noodles for 30 seconds on each side, or until golden brown. Use a slotted spoon to carefully remove the noodles and drain on paper towels. Let cool completely before serving or storing.
