Tender pork meatballs and linguine noodles are cooked together in an Instant Pot, then tossed in a savory sesame-peanut sauce. This quick and flavorful dish is perfect for a weeknight dinner.

Let's Cook

  1. Step 1.

    In a large bowl, combine the ground pork, panko breadcrumbs, egg, finely chopped scallion whites, finely chopped cilantro, 2 teaspoons of the grated ginger, two-thirds of the grated garlic, and ¼ teaspoon each salt and pepper. Mix until well combined, then form the mixture into 1½-inch balls (about 16 total).

  2. Step 2.

    In the pot of the Instant Pot, stir together the broken linguine noodles and 1 tablespoon of the sesame oil until the noodles are coated. Place the meatballs on top of the noodles, then add 1¾ cups water and ¼ teaspoon salt. Lock the lid, set to cook on high pressure for 6 minutes. Once done, use the quick release method to release the pressure, then open the lid and press Cancel.

  3. Step 3.

    While the noodles and meatballs cook, in a medium bowl, whisk together the creamy peanut butter, reduced-sodium soy sauce, lime juice, light brown sugar, and the remaining 1 tablespoon sesame oil, 2 teaspoons ginger, and remaining garlic until smooth.

  4. Step 4.

    Pour the peanut sauce over the noodles and meatballs in the Instant Pot and stir gently to combine. Cover with the lid and let sit for 5 minutes to allow the flavors to meld.

  5. Step 5.

    Transfer the noodles and meatballs to serving plates. Top with the reserved scallion greens, thinly sliced red chile, and sesame seeds. Serve with lime wedges for squeezing over the top.
