Seasoned Tempeh Crumbles
4 servings Tempeh crumbles make an excellent stand-in for ground meat. Here, they are seasoned like Italian sausage and could easily serve as the basis for a tomato sauce. For use in other dishes, try substituting for ground meat in Picadillo, Spiced Ground Meat for Tacos, Nachos, or Sloppy Joes, adjusting the amount of tempeh accordingly.

- 12 ounces tempeh (steamed, above, if desired)
- 3 tablespoons vegetable or olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- (½ teaspoon fennel seeds)
- ½ teaspoon salt

Coarsely crumble with your hands: 12 ounces tempeh (steamed, above, if desired)

Warm in a medium skillet over medium heat: 3 tablespoons vegetable or olive oil

Add and cook until fragrant, about 30 seconds: 3 garlic cloves, minced

Stir in the tempeh and cook, stirring frequently, until browned, 8 to 10 minutes. Stir in: 1 teaspoon dried oregano; ½ teaspoon red pepper flakes; (½ teaspoon fennel seeds); ½ teaspoon salt
