Prepare

  • 1 1/4 lbs skinless salmon fillet, cut into 4 portions
  • Trim 1 lb green beans
  • 4 clove garlic, smashed and thinly sliced
  • 1 small red chile, thinly sliced
  • 2 tbsp capers, drained and patted dry
  • Lemon wedges, for serving (optional)

Let's Cook

  1. Step 1.

    Heat 2 teaspoons of the olive oil in a large skillet over medium-high heat. Season the salmon portions with ½ teaspoon each salt and pepper. Place the salmon in the skillet flesh side down, reduce the heat to medium, and cook until golden brown and just opaque throughout, 5 to 6 minutes per side. Remove the salmon from the skillet and set aside.

  2. Step 2.

    While the salmon cooks, heat the remaining 2 tablespoons olive oil in a large cast-iron skillet over medium-high heat. Add the trimmed green beans and cook without stirring until browned on one side, about 2½ minutes. Use tongs to turn the beans and continue cooking until browned all over and just barely tender, about 3 minutes more.

  3. Step 3.

    Remove the cast-iron skillet from the heat. Toss the green beans with ¼ teaspoon salt, then add the sliced garlic, sliced chile, and drained capers. Return the skillet to medium heat and cook, tossing constantly, until the garlic is golden brown, 1 to 2 minutes. Serve the green beans alongside the salmon with lemon wedges if desired.
