  • 1 1/2 tbsp sherry vinegar
  • 1/2 cup store-bought dry waffle mix
  • other batter ingredients specified in package directions
  • 1/2 tsp curry powder
  • ground coriander
  • Kosher salt and pepper
  • 2 cup baby arugula
  • Greek yogurt

Prepare

  • Rinse 1 cup cooked and drained lentils
  • small red onion, thinly sliced
  • Chop 2 tbsp golden raisins
  • Chop 2 tbsp toasted almonds

Let's Cook

  1. Step 1.

    In a small bowl, combine the cooked lentils, thinly sliced red onion, chopped golden raisins, olive oil, and sherry vinegar. Set aside.

  2. Step 2.

    In a medium bowl, whisk together the dry waffle mix, curry powder, ground coriander, and a pinch each of salt and pepper. Add the additional ingredients (such as egg, milk, or oil) as directed on the waffle mix package and stir until just combined.

  3. Step 3.

    Preheat your waffle iron according to the manufacturer's instructions. Pour the batter onto the hot waffle iron and cook until golden and crisp, about 3–5 minutes, or as directed by your waffle maker.

    While the waffle cooks, toss the baby arugula and chopped toasted almonds with the lentil mixture from step 1.

  5. Step 5.

    When the waffle is done, split it in half and spread with Greek yogurt if desired. Top each half with the lentil-arugula salad and serve immediately.
