Sautéed Pork Chops

4 servings This method works well for chops up to 1 ½ inches thick. For thicker, double-cut chops, treat as for Pan-Roasted Pork Tenderloin. Preheat the oven to 350°F, brown the chops as described below using an ovenproof skillet, then transfer them to the oven to finish cooking.
Ingredients
- 4 bone-in or boneless pork loin chops, 1 inch thick (about 1 ½ pounds)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon vegetable oil

Gather these ingredients - no prep needed yet.
- 4 bone-in or boneless pork loin chops, 1 inch thick (about 1 ½ pounds)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 (A pan sauce or the sauce for Steak Diane)
Let's Cook

Step 1.
Pat dry: 4 bone-in or boneless pork loin chops, 1 inch thick (about 1 ½ pounds)

Season with: 1 teaspoon salt; ½ teaspoon black pepper

Step 3.
If possible, place the chops on a rack set in a rimmed baking sheet and refrigerate uncovered for at least 1 hour (this will promote browning).

Heat in a large skillet over medium-high heat: 1 tablespoon vegetable oil

Add the chops and cook until a thermometer inserted in the center of each chop registers 145°F, 4 to 5 minutes per side. Transfer to a warmed platter or plates to rest for 5 minutes. Meanwhile, if desired, pour off all but 1 tablespoon of fat from the skillet and make: (A pan sauce or the sauce for Steak Diane)
