Salmon Burgers With Spiced Sweet Potato Fries

- 2 tbsp olive oil, divided
- 3/4 lbs skinless salmon fillet, cut into 1-inch pieces
- 1 scallion, thinly sliced
- Toast 2 burger buns
- 0.5 avocado, thinly sliced

Step 1.
Heat oven to 450°F. On a rimmed baking sheet, toss sweet potato wedges with 1 tablespoon olive oil, five-spice powder, and ⅛ teaspoon salt. Roast until crisp, 20 to 25 minutes.

While the sweet potatoes roast, in a food processor, pulse the salmon pieces, soy sauce, and sesame oil just until coarsely chopped, about 5-6 pulses. Add the sliced scallion and pulse once or twice to combine. Form the mixture into two ¾-inch-thick patties.

Heat the remaining 1 tablespoon olive oil in a medium nonstick skillet over medium heat. Cook the salmon patties until opaque throughout, 2 to 3 minutes per side, turning once. Transfer the patties to toasted burger buns and top with sliced avocado and sprouts. Serve with the roasted sweet potato fries.
