Prepare

  • Trim 3/4 lbs green beans
  • 2 medium shallots, peeled and thinly sliced
  • 1 tbsp fresh thyme, roughly chopped

  1. Step 1.

    Preheat the oven to 375°F. Line a sheet pan with parchment paper.

    On the prepared sheet pan, combine the sliced mushrooms, 2 tablespoons avocado oil, ½ teaspoon salt, ½ teaspoon dried thyme, and ½ teaspoon dried rosemary. Toss until the mushrooms are evenly coated, then spread them into a single layer.

Toss until everything is evenly coated.

    After the mushrooms have baked for 15 minutes, remove the pan from the oven. Carefully pour the shallot and green bean mixture over the mushrooms. Arrange the shallots flat on the baking sheet (the pan will be hot) and let the green beans sit on top of the other vegetables.

    Return the pan to the oven and bake for 30 minutes, until the vegetables are tender and the mushrooms are a deep brown. Serve immediately.
