  • 2 clove garlic, pressed
  • 1/4 lbs feta cheese, crumbled
  • Pitas and baby spinach, cooked rice or couscous, or salad greens, for serving

    In a 1½- to 2-quart baking dish, combine the shrimp, roasted red peppers, scallions, garlic, white wine, lemon juice, and ¼ teaspoon each salt and pepper. Toss to coat evenly.
