Let's Cook

  1. Step 1.

    Preheat the oven to 425°F. Coat a small rimmed baking sheet with 1 tablespoon olive oil.

  2. Step 2.

    Place the apple halves cut sides down on the prepared baking sheet. Sprinkle with 4 sprigs fresh thyme (leaves removed or whole sprigs). Roast until tender when pierced with a fork, 15 to 18 minutes.

  3. Step 3.

    Transfer the roasted apples to serving bowls, cut sides up. Spoon any pan juices over the apples. Add dollops of vanilla Greek yogurt on top and sprinkle with additional fresh thyme if desired.
