- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 1/2 tsp salt
- butter or shortening

Step 1.
Preheat the oven to 425°F. Lightly butter a baking sheet and set aside.

Sift together the self-rising flour, cream of tartar, baking soda, and salt into a large bowl. Add the butter and rub it into the flour mixture with your fingertips or cut it in with a pastry blender until the mixture resembles large flaky crumbs.

Pour in the milk and stir with a fork until a soft dough forms. Do not overmix.

Turn the dough out onto a lightly floured surface. Roll it out to a thickness of about ½ inch. Using a biscuit cutter (2 to 2½ inches in diameter), cut out rounds. Gather scraps, re-roll, and cut again. Dust the tops of the rounds with a little flour.

Arrange the scone rounds on the prepared baking sheet, placing them fairly close together (they will rise and spread slightly). Bake for 12 to 15 minutes, until the scones have risen and turned golden brown on top.
