Quinoa Tabbouleh Bowl With Hummus Dressing

Step 1.
In a large bowl, combine 2 cups finely minced stemmed kale, 2 cups cooked quinoa, 2 cups cooked chickpeas, 1 cup finely diced cucumber, ½ cup quartered cherry tomatoes, ¼ cup finely minced fresh parsley, ¼ cup finely diced celery, ¼ cup finely diced red onion, 1 tablespoon freshly squeezed lemon juice, 1 tablespoon avocado oil, the leaves from 2 sprigs mint finely minced, ½ teaspoon sea salt, and ¼ teaspoon freshly ground black pepper. Mix well, then taste and adjust seasoning if desired.

While the tabbouleh sits, make the hummus dressing: In a blender, combine ¼ cup hummus, ¼ cup water, 1 tablespoon freshly squeezed lemon juice, ¼ teaspoon ground cumin, a pinch of sea salt, and a pinch of freshly ground black pepper. Blend on high for about 1 minute until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if desired.
