A quick and easy hot chocolate made with ganache and milk, water, or coffee. Optionally flavored with vanilla or liqueur and topped with whipped cream and spices.

    • 8 ounces dark, bittersweet, or semisweet chocolate (60 to 72% cacao), finely chopped

    1. Bring to a rolling boil in a medium heavy saucepan: 1 cup heavy cream
    2. Immediately remove from the heat and add, whisking until smooth: 8 ounces dark, bittersweet, or semisweet chocolate (60 to 72% cacao), finely chopped
    3. Use immediately or let cool, then refrigerate, covered, for up to 2 weeks.
  • ½ cup milk, water, or coffee
  • (⅛ teaspoon vanilla or ½ teaspoon Kahlúa or Grand Marnier)

    • (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste)

Beat in a large bowl (chill the bowl if your kitchen is very warm) with a hand mixer or balloon whisk or in a stand mixer set at medium-high speed, until stiff and billowy but not grainy: 1 cup cold heavy cream; (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste); (½ teaspoon vanilla)
    2. Use immediately.

    Stir together in a small saucepan or mug: ¼ cup Ganache for Hot Chocolate; ½ cup milk, water, or coffee

  2. Step 2.

    Heat over low heat, or in a microwave on high for 30 to 45 seconds, until warm but not boiling. If desired, stir in: (⅛ teaspoon vanilla or ½ teaspoon Kahlúa or Grand Marnier)

  3. Step 3.

    Top with: A dollop of Whipped Cream; Ground nutmeg or cinnamon
