One 9-inch square coffee cake Perfect for a Sunday brunch. Preheat the oven to 375°F. Grease a 9-inch square baking pan and line with parchment paper so the parchment comes above the rim of the pan on 2 opposite sides.

  • 1 ½ cups sifted (180g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 4 tablespoons (2 oz or 55g) unsalted butter, softened
  • ½ cup (100g) sugar
  • Finely grated zest of 1 lemon or orange
  • ½ teaspoon vanilla
  • 1 large egg
  • ⅔ cup (155g) milk
  • (1 ¼ cups berries, pitted cherries, fresh or frozen cranberries, or diced apples)
  • (⅓ cup sugar)

    Sub-recipe steps
    1. Combine in a small bowl and blend until crumbly: ⅓ cup sugar; 2 tablespoons all-purpose or rice flour; 2 tablespoons unsalted butter; ½ teaspoon ground cinnamon
    2. Add, if desired: (¼ to ½ cup chopped toasted nuts)
    3. Sprinkle the streusel over the batter or dough and bake as directed.
    4. Whisk to combine in a medium bowl: ½ cup all-purpose flour; ½ cup sugar; (½ teaspoon ground cinnamon); (¼ teaspoon ground cardamom); ¼ teaspoon salt
    5. Add: 5 tablespoons cold unsalted butter, cut into small cubes
    6. Work the butter into the flour with your fingers until the mixture forms medium-sized clumps. Refrigerate until ready to use. Sprinkle the streusel over the batter or dough and bake as directed.

    Beat in a large bowl or stand mixer fitted with the paddle attachment until light and fluffy: 4 tablespoons (2 oz or 55g) unsalted butter, softened; ½ cup (100g) sugar

  3. Step 3.

    Beat in: Finely grated zest of 1 lemon or orange; ½ teaspoon vanilla

  4. Step 4.

    Beat in: 1 large egg

  5. Step 5.

    Beat in the flour mixture in 2 additions, alternating with: ⅔ cup (155g) milk

  6. Step 6.

    Stir or mix until smooth. Spread the batter in the prepared pan. If desired, toss together and sprinkle over the batter: (1 ¼ cups berries, pitted cherries, fresh or frozen cranberries, or diced apples); (⅓ cup sugar)

  7. Step 7.

    Then sprinkle with: Streusel

  8. Step 8.

    Bake until a toothpick inserted in the center of the cake comes out clean or with moist crumbs attached, about 25 minutes if covered with streusel alone, 25 to 30 minutes if covered with fruit and streusel. Let cool in the pan on a rack.
