    Preheat the oven to 400°F. Cook in a medium skillet over medium heat until browned, 4 to 6 minutes: 4 ounces fresh chorizo, crumbled

    Transfer to a plate lined with paper towels to drain. Have ready: 3 green onions, thinly sliced; 2 jalapeño peppers or ½ poblano, seeded and minced; 1 garlic clove, minced

    Place in a 9-inch pie dish or shallow baking dish: 3 cups grated Cheddar, Monterey Jack, Oaxaca, asadero, or Muenster cheese or a combination (12 ounces)

    Top with the chorizo, green onions, jalapeños, and garlic and bake until bubbling and browned, about 10 minutes.
