Gather these ingredients - no prep needed yet.

  • 310 g wholemeal flour
  • 1/2 tsp salt
  • vegetable oil
  • 100 ml water

Let's Cook

  1. Step 1.

    In a large mixing bowl, combine 310g (generous 2 cups) wholemeal flour and ½ tsp salt. Make a small well in the center, add a little water, and begin mixing. Gradually add up to 100ml (scant ½ cup) water, mixing continuously until a dough forms.

  2. Step 2.

    Transfer the dough to a floured work surface and knead for 5 minutes until soft and smooth. Cover with plastic wrap and refrigerate for 15 minutes to rest.

  3. Step 3.

    Remove the dough from the refrigerator and divide into 8 equal pieces. Roll each piece into a ball in your palms, then flatten slightly. Dust with extra flour and roll each into a thin disc about 2mm (⅛ inch) thick.

  4. Step 4.

    While the dough rests or after rolling, set a wok over medium heat and add vegetable oil to a depth of 2.5cm (1 inch). Test the oil by dropping in a breadcrumb; it should sizzle and turn golden brown when ready.

  5. Step 5.

    Carefully lower one puri into the hot oil. Fry for 40–50 seconds per side until puffed and golden brown. Remove with a slotted metal spoon and drain on paper towels. Serve immediately.
