Pulla
Pulla is a Finnish sweet cardamom bread shaped into soft rolls. The dough is enriched with butter and egg, and flavored with freshly ground cardamom. These golden buns are perfect for a cozy snack or breakfast treat.

- Beat 1 egg
- 1 egg, beaten, for glazing

Step 1.
Crush the green cardamom pods using a mortar and pestle, discard the husks, and grind the seeds into a fine powder.

In a large bowl, rub the softened butter and fresh yeast into the plain flour until the mixture resembles breadcrumbs. Add the milk, beaten egg, caster sugar, salt, and ground cardamom seeds. Mix thoroughly to form a soft dough. Cover the bowl with plastic wrap or a damp cloth and refrigerate overnight to allow the dough to rise slowly.

The next day, grease a large baking sheet with butter. Turn the chilled dough out onto a lightly floured surface and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them on the prepared baking sheet, spacing them about 5 cm (2 inches) apart. Cover loosely with a clean kitchen towel and let rise at room temperature for about 1 hour, until puffy.

Step 4.
Preheat the oven to 200°C (180°C fan)/400°F/gas 6. Brush the top of each risen pulla with beaten egg for glazing. Bake for 10–15 minutes, until golden brown and the bottoms sound hollow when tapped. Transfer to a wire rack to cool slightly before serving.
