Puffed RICE Treats
Puffed rice treats are a fun, crunchy topping for doughnuts. Dip glazed doughnuts in a marshmallow-puffed rice mixture, then drizzle with chocolate and flaky sea salt.
Ingredients
- 1 dough of choice
- 2 cup marshmallows
- 2 tbsp unsalted butter
- 1/4 tsp kosher salt
- 2 cup puffed rice cereal
- 1.5 Basic Sugar glaze
- 2 1/2 oz dark or milk chocolate coarsely chopped
- Flaky sea salt for garnish

Gather these ingredients — no prep needed yet.
- 1 dough of choice
- 2 cup marshmallows
- 2 tbsp unsalted butter
- 1/4 tsp kosher salt
- 2 cup puffed rice cereal
- 1.5 Basic Sugar glaze
Prepare
- 2 1/2 oz dark or milk chocolate, coarsely chopped
- Flaky sea salt, for garnish

Step 1.
Prepare the chosen dough and fry or bake as directed. Allow the doughnuts to cool completely while you prepare the topping.

In a medium pot over low heat, cook the marshmallows and butter, stirring frequently, until completely melted, 3 to 4 minutes. Stir in the kosher salt.

Add the puffed rice cereal to the pot and stir until all the cereal is evenly coated with the marshmallow mixture. Remove from heat.

Lay a piece of wax paper on a clean, flat surface.

Dip the top of a cooled doughnut into the Basic Sugar Glaze, letting excess drip off. Spoon about 2 tablespoons of the cereal mixture onto the glazed top, then gently press the doughnut, topping side down, onto the wax paper to flatten the topping into an even layer. Repeat with the remaining doughnuts.

Step 6.
In a double boiler over medium heat, or in a heatproof bowl set over a bowl of hot water, melt the chopped chocolate, stirring until smooth. Use a spoon to drizzle the melted chocolate over the cereal topping on each doughnut, then sprinkle with a pinch of flaky sea salt.
