Princess “Hush NOW” HUSH Puppies
These hush puppies are made with cornmeal, sweet onion, and scallions, then fried until golden. A classic Southern side dish with a touch of cayenne for heat.

In a large bowl, whisk together 1¼ cups cornmeal, ½ cup flour, 1 teaspoon baking powder, ½ teaspoon baking soda, 1½ teaspoons kosher salt, ¼ teaspoon cayenne, ¾ cup grated sweet onion, and 3 thinly sliced scallions until combined.

Using a wooden spoon, make a well in the center of the dry mixture. Add 1 egg and ¾ cup buttermilk to the well. Whisk the egg and buttermilk together in the well, then gradually incorporate the dry ingredients, mixing just until combined. Do not overmix. Use a rubber spatula to scrape down the bowl, ensuring no clumps of cornmeal remain.

Line a plate with paper towels and set aside. In a deep cast-iron skillet or Dutch oven, heat 3 inches of canola oil over medium-high heat until it reaches 375°F on a deep-fry thermometer.

Using a 1-ounce scoop or a heaping tablespoon (or heaping teaspoon for small puppies), scoop the batter and gently drop it into the hot oil. Fry in small batches, maintaining the oil at 375°F, until golden brown on all sides, 2 to 3 minutes. Remove with tongs or a slotted spatula and drain on the paper towel-lined plate.
