- Crush 1 garlic clove

Step 1.
Cut the pork into roughly 1-inch cubes and place in a bowl.

In a separate small bowl, mix together the salt, sugar, cumin, allspice, thyme, oregano, and crushed garlic. Add the olive oil, white wine vinegar, and plenty of cracked black pepper, and stir to combine.

Pour the marinade over the pork cubes and massage well into every piece, ensuring all surfaces are coated.
