  • 1 cup Pinot Noir BBQ Sauce

  • 2 tbsp honey

Let's Cook

  1. Step 1.

    Preheat the smoker to 225°F using fruitwood, such as cherry for color and sweetness.

    Trim excess skin and fat from the 5-pound pork belly, then cut into 2-inch cubes.

  3. Step 3.

    Place the pork cubes in a large bowl. Drizzle with 3 tablespoons extra-virgin olive oil and coat evenly with 1 cup Sweet Rub.

    Arrange the seasoned cubes on a wire rack (or directly on the smoker grates) to allow fat to drip away. Smoke uncovered for 3 hours, until the cubes develop a darker red color and a modest bark (crust).

    Transfer the smoked cubes to a 9x13-inch smoker-safe dish. Add 1 cup Pinot Noir BBQ Sauce, 3 tablespoons unsalted butter, and 2 tablespoons honey. Stir to coat.

    Cover the dish tightly with aluminum foil and return to the smoker. Cook for 90 minutes, until the internal temperature of the meat reaches 200–203°F.

    Remove the foil, stir the cubes, and smoke uncovered for another 15 minutes to let the sauce thicken.

    Remove from the smoker and serve immediately.
