Poppy Seed Filling Cockaigne
A rich, sweet poppy seed filling made with milk, brown sugar, butter, egg yolks, and almond paste. Perfect for filling pastries or cakes.

- ½ cup poppy seeds
- ¼ cup milk
- ⅓ cup packed brown sugar
- 2 tablespoons butter
- 2 large egg yolks
- 1 ⅓ cup almond paste, store-bought or homemade, or ½ cup almond meal or flour (opens in new tab)
- (3 tablespoons chopped candied citron)
- (2 teaspoons lemon juice or 1 teaspoon vanilla)
