  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp pink Himalayan salt
  • 1 pinch ground cloves
  • 1/2 cup extra-virgin olive oil
  • 2 cup shelled raw sunflower seeds
  • 1 tbsp avocado oil
  • 1 tsp fine sea salt

Prepare

  • Chop 1/2 cup fresh ripe papaya

Let's Cook

  1. Step 1.

    In a blender, combine the chopped papaya, lime juice, apple cider vinegar, coconut sugar, Dijon mustard, pink Himalayan salt, and ground cloves. Blend on high for 1 minute until smooth.

    Reduce the blender speed to low. With the blender running, slowly drizzle in the olive oil until the dressing is fully combined and emulsified. Taste and adjust seasoning with more salt or coconut sugar if needed. Set aside.

    Place the sunflower seeds in a medium skillet over medium heat. Toast, stirring frequently, for 5 to 7 minutes until lightly browned and aromatic.

  4. Step 4.

    Stir in the avocado oil and sea salt into the skillet with the sunflower seeds. Continue heating for 2 minutes, stirring constantly.

  5. Step 5.

    Remove the sunflower seeds from the skillet and spread them onto a baking sheet to cool completely. Once cool, transfer to an airtight container and store at room temperature for up to 1 month.
