Nutty Shortbread

In a medium bowl, using an electric mixer on medium speed, beat together ½ cup (1 stick) unsalted butter (at room temperature), ½ cup granulated sugar, and 1 teaspoon alcohol-free pure vanilla extract until well blended, about 2 minutes.
