Let's Cook

  1. Step 1.

    In a medium bowl, toss the thinly sliced radishes, scallion matchsticks, and carrot ribbons with 2 tablespoons of fresh lime juice. Fold in the fresh mint leaves and set aside.

    In a large bowl, whisk together the mayonnaise, remaining 2 tablespoons of lime juice, and gochujang until smooth.

  3. Step 3.

    Cut the peeled cooked shrimp into bite-size pieces and add them to the bowl with the sauce. Toss until the shrimp are evenly coated.

  4. Step 4.

    Split the sandwich rolls and fill each with the shrimp mixture. Top with the carrot ribbon salad and serve immediately.
